In July 1978, the Queseras de Bolívar Store was opened in Quito, one month after cheese production had begun in Salinas de Guaranda with the advice of Swiss technician José Dubach. Following the path of strengthening the commercialization and the strengthening of the cheese factories, the Consortium of Rural Community Cheesemakers was formed in 1991, becoming one more of the actors in the Social and Solidarity Economy of the salt process.

We care about the quality of Our Products
Through the Bolívar Cheese Stores (TQB), the collection, distribution and sale of dairy products is carried out, the main area of commercial activity, for which there is infrastructure, human and technical resources, equipment and processes to guarantee compliance with quality and safety standards.
Below is a detailed description of the process that takes place at the “Quality Assurance Center” in the main winery located in Salinas de Guaranda. Starting with a Quality Control Process where the Organoleptic Analysis is carried out: the flavour, texture and aroma are verified and the Visual Analysis: where the colour, impurities, cracking, swelling and porosity are verified; once these analyses are carried out, the results are rated and it is assessed whether the product meets the quality conditions to move on to the Product Reception phase where the product is weighed, classified and then packaged, sealed and ready for distribution.
